Steak on a Gres Vulcano refractory stone, anti-adhesion and anti-smoke.
The dish is preheated to direct fire or in the oven for about 10 min., then moved to the table and it keeps itself warm for about 12-14 min. or 20 to 25 min. with the help of a gas burner or a Vulcano Gres stainless support with burner for ethanol gel fuel. Should the guest arrive too late, we should change the dish for another pre-heated in the kitchen, however the dish keeps the temperature twice than any dish of cast iron, tile or basalt stone.

It is not necessary to grease the platter surface with meat fat due to the special non-stick enamel, thereby we reduce substantially the smoke produced due to unnecessary fat burning. Furthermore, this enamel is designed not to dilate or crack with the temperature, this is to avoid that the piece loads this fat and releases undesirable fumes in the room in a later warming.

The manufacturing process consists of pressing and subsequent trimming of excess material by hand. Then we let the pans dry and bake them at high temperatures.
After baking, we apply the enamel and repeat baking at a higher temperature to achieve the desired scratch resistance.
We got the anti-adhesion in our enamels so that the steak does not get “stuck” when we cook it on the stone and as it is not necessary to “grease” with sebum, this reduces smoke in the dining room.

                                                                                           REFRACTORY CASSEROLES. RESISTANCE TEST.
We place two casseroles to direct flame of any industrial catering kitchen.
We wait a minute and pour water into the two casseroles, the one of white refractory tile used in most restaurants will click after sudden contact with cold water and we will see a crack where small bubbles will soon start out and where it will finish by breaking.

We do the same test with our Vulcano Gres refractory casserole, and it resists perfectly smoothly. We have even made more extreme tests like subjecting our low expansion stoneware to the direct flame of a torch and immerse it in cold water straight away, and has also exceptionally behaved.

Please notice the stains on the enamel from the white casserole in the video; you can see that because the enamel is not refractory and tends to collect dirt by filtering, whereas our casseroles remain unchanged after cooking any type of food.
